Ingredients:

  • 1 1/4 cups cake flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup caster sugar
  • 2 eggs
  • 1/8 cup unsalted butter
  • 1/4 cup vegetable oil
  • 2/3 cup milk
  • 1/4 cup lemon juice
  • 1 tsp lemon zest
  • 1 tsp vanilla extract

Whipped Cream Cheese:

  • 3.5 oz cream cheese
  • 1/4 cup icing sugar
  • 3/4 cup whipping cream
  • 1/2 tsp vanilla extract
  • a pinch of salt

Directions:

Step 1

Add 3/4 cup caster sugar and 2 eggs in a large mixing bowl, then whisk using a handheld mixer. Beat until light and fluffy. Next, add 1/4 cup lemon juice, 1 tsp lemon zest, and 1 tsp vanilla extract. Continue whisking until combined. Now, sift 1 1/4 cups cake flour, 2 tsp baking powder, and 1/2 tsp salt over, then fold gently until just combined. Set aside. Add 1/8 cup unsalted butter, 1/4 cup vegetable oil, and 2/3 cup milk in a mixing jug. Microwave for a minute, then mix. Add this to the batter and stir.

Step 2

Transfer the batter to an 8 x 8 baking tray lined with parchment paper. Tap it a few times to remove air bubbles. Place it in a 325 degrees F oven and bake for 20 to 25 minutes. After baking, let it cool completely. In the meantime, make the whipped cream cheese mixture. Combine 3.5 oz cream cheese, 1/4 cup icing sugar, and a pinch of salt in a large mixing bowl, then mix using an electric mixer until smooth. Next, add 1/2 tsp vanilla extract, mix, then stir in 3/4 cup whipping cream. Beat until firm peaks. Once done, spread it all over the cake. Slice the cake into smaller pieces, then garnish with a lemon wedge and some zest.
