Whether you are on a keto diet or not, you would surely love this air-fried snack! Instead of the usually fried potato, this recipe uses zucchini which makes it interesting because, for some people who are not a big fan of the said vegetable, it actually tastes delicious. This is also an inexpensive recipe that you can make using whatever seasoning or cheese is available in your kitchen, just use whatever you have or want, and let the air fryer do its magic. Thanks to Melanie Cooks on YouTube for this super simple and yummy idea.

Ingredients:

  • 2 pieces of zucchini
  • ¼ cup of parmesan cheese
  • 1 tbsp of olive oil
  • ½ tsp of salt
  • ¼ tsp of pepper
  • ½ tsp of Italian seasoning

Directions:

Step 1

After washing the zucchinis well, pat them dry then cut off both of their ends. Cut it in half lengthwise, then cut each strip in half across. Start slicing each cut of the zucchini into the shape of the usual potato fries. After cutting, transfer them in a large mixing bowl, then drizzle them with some olive oil, sprinkle lots of parmesan cheese, some Italian seasoning, salt, and pepper. Toss them together with your hands or use tongs until each slice of zucchini is well seasoned and coated.

Step 2

In your air fryer basket, start placing all of the seasoned zucchini and arrange them in a single layer. Set your air fryer to 400 degrees Fahrenheit and let them cook for about 10 minutes until they are crispy and golden brown. After frying, you can sprinkle it with some more parmesan cheese or salt to taste. Then, serve and enjoy!
