I love making meals using chicken. There are tons of recipes to choose from, and you will never run out of options. Some of my favorites are this Easy 30-Minute Creamy Chicken Spaghetti Recipe and this One-Pan Cheesy Chicken and Broccoli Rice. I wanted to try something different, so I searched some recipe videos on YouTube and found these juicy baked chicken meatballs by Currytrail.

I made it for dinner, and it turned out amazing. I never thought chicken meatballs could be this juicy! It’s not dry at all. I also thought it would be under-seasoned, but I was wrong. It was cheesy and flavorful! You will definitely love making this recipe at home as it’s super easy. If you are looking for some sides that go well with this dish, you can try cheese risotto, red beans, rice, mashed potatoes, and pasta. It can also be a great appetizer or for meal prep – just serve it with your favorite dip. This will surely be on our weekly dinner rotation.

Start by preheating your oven to 400F.
In a large bowl, add the ground chicken, grated onion, minced garlic, parsley, egg, Italian seasoning, cayenne pepper, salt, pepper, panko breadcrumbs, and freshly grated parmesan cheese. Using your hands or spatula, mix all ingredients until just combined. Make sure not to over work the meat otherwise you will get dry meatballs.
Portion the meatballs using a small scoop or tablespoon. Shape each one into balls.
Spray your baking tray with some olive oil. You can also place a wire rack on top of the tray just make sure to grease it well. Place the meatballs to the prepared tray in a single layer about 1/2 to 1 inch apart.
Generously spray olive oil on top of all meatballs.
Place inside the pre-heated oven at 400F and bake for 18 to 20 minutes or until browned and cooked through. Make sure not to overcook them. Immediately remove from the oven as soon as you see them browning. The meatballs should be juicy and soft.
Allow the meatballs to rest for about 3 to 5 minutes, then sprinkle fresh parsley and parmesan cheese powder. Serve immediately.
