Ingredients:

  • 1 1/9 cups butter
  • 1/2 cup sugar
  • 2 eggs
  • 3 cups flour
  • 1/2 tsp baking soda
  • 3 tsp baking powder
  • jam, of choice

Directions:

Step 1

Add 1 1/9 cups butter and 1/2 cup sugar in a large mixing bowl and whisk together until combined. Next, add 2 eggs and continue to whisk. Once combined, sift 3 cups of flour, 3 tsp baking powder, and 1/2 tsp baking soda. Mix well until dough forms, then knead until smooth. After this, divide the dough into two portions, then chill the other half for fifteen minutes.

Step 2

Line the baking tray with parchment paper, then add and spread the other half of the dough, pushing it down nicely and evenly. Poke some holes all over the dough using a fork, then spread the jam of your choice. After this, grate the chilled dough over the jam layer, covering the entire surface. Place it in a 320 degrees F oven and bake for 20 minutes. Serve and enjoy!
