Ingredients:

  • 2 boxes (3.5 oz) lemon instant pudding & pie mix
  • 1 container (8 oz) cool whip, thawed
  • 3 cups cold milk
  • 1 package (16 oz) graham crackers

Frosting:

  • 1/2 cup butter, room temperature
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 – 2 tbsp fresh lemon juice

Directions:

Step 1

Add two boxes of lemon instant pudding to a large mixing bowl along with 3 cups of cold milk. Whisk together using a handheld mixer until pudding consistency, then stir in one container of thawed cool whip. Next, put one layer of the graham cracker on the bottom of the casserole dish, then pour half of the pudding mixture on top. Spread nicely and evenly. After this, add another layer of graham crackers over the pudding, then put the rest of the pudding mixture over, spreading it evenly.

Step 2

Lastly, put two layers of graham crackers, then set aside. Next, take a large mixing bowl and make the frosting. Combine 1/2 cup (1 stick) of room temperature butter, 1 cup powdered sugar, 2 tbsp of milk, and 1 tbsp lemon juice. Whisk until nice and smooth. After this, add it on top of the dessert, spreading it nicely and evenly. Sprinkle some crushed graham crackers on top to finish it. Cover the casserole, put it in the fridge, and let it set for four hours before consuming.
