Ingredients:

  • 1½ cups (7 or 8 ounces) of raisins
  • 1 cup + 1 tablespoon of water, divided
  • 1 tablespoon of shortening
  • 1 cup of brown sugar
  • ½ teaspoon of cinnamon
  • ½ teaspoon of cloves
  • ½ teaspoon of salt
  • 1½ cups of flour
  • ½ teaspoon of baking soda

Optional additional ingredients

  • ½ cup of chopped nuts
  • ½ teaspoon of ginger
  • ½ teaspoon of nutmeg
  • Cranberries, to replace raisins

Directions:

Step 1

Place a pot or saucepan on a stove over medium to medium-high heat, then add a cup of water, followed by the raisins, cranberries, or any dried fruit you desire. Add the cinnamon, cloves, salt, shortening, and brown sugar, then stir them all together, and let them cook for about20 to 30 minutes or until the spices and the sugar has dissolved or it has reached the desired consistency. Let it cool down for about 15 to 20 minutes while preparing the rest of the ingredients.

Step 2

Heat up about a tablespoon of water in a microwave-safe bowl or cup, then add the baking soda, swirl the cup around to dissolve the baking soda, and set it aside. Sift the flour over the raisins mixture, then add the baking soda water mixture in, and stir them together until they are well combined. Transfer the cake batter to a greased 8 by 8 pan or 12-muffin pan (double the ingredients for a 9 by 13 pan), then spread the batter until nice and even. Put it in a preheated oven at 350°, then let it bake for about 25 to 30 minutes or until golden brown. Serve it topped with some cream cheese frosting and enjoy!
