Zucchini recipes are surprisingly really filling and you can eat a few without feeling and sluggish. Even when I’m not on a diet, I would make these pizza zucchini boats because they are a great way to eat vegetables as well. Zucchini makes me feel light and this gives me another recipe idea. This can be vegetarian-friendly if you skip out on the pepperoni and just add cheese. It’s guilt-free and not greasy, unlike regular pizza crust. I love regular pizza but I think it would be interesting to see how these would taste.

Ingredients:

  • 4 large zucchini, halved lengthwise
  • 1 (16-oz.) jar marinara sauce
  • 2 cup shredded mozzarella
  • 1 cup mini pepperoni
  • Chopped fresh basil, for garnish

Overall, I love how cheesy these pizza boats look and they are very simple to make with only a few ingredients. It looks super cheesy I think they would taste super good to make for your kids as well. I love healthy alternatives to food that I enjoy, but it’s nice to make a rather fresh version of pizza. The pizza zucchini boats look so cute and it has a nice presentation when the cheese melts over.
