Start by preheating the oven to 400F and lining two baking sheets with parchment paper.
In the bowl of a stand mixer, add butter, brown sugar, and sugar. Mix on low speed with the paddle attachment until just combined. Turn the speed to medium and mix until smooth for about a minute.
Add the eggs and vanilla extract. Beat until just combined for about 30 seconds. Next, add the all-purpose flour, baking powder, baking soda, and salt. Mix until just combined. Stir in the quick oats.
Add the chocolate chips, pecans, and coconut flakes. Fold them in using a large spoon or rubber spatula.
Divide the dough into 12 equal pieces, then roll each one into large balls. Place them onto the prepared baking sheets. Make sure not to overcrowd the pan. Only put 6 per tray.
Place in the preheated oven and bake at 400F for about 10 to 12 minutes.
Once done baking, let them cool for 15 minutes before serving them warm or transferring them to a wire rack to let the cookies cool completely.
