Step 1

Preheat your oven to 340°F, then place a saucepan on a stove over medium heat, add the sugar and water, and cook them until golden. Pour the caramel into an 8×3-inch round cake pan, then set it aside to cool down, while waiting for it to cool prepare the flan.

Step 2

In another bowl, add the egg yolks, condensed milk, evaporated milk, vanilla, and salt, then mix them, and set them aside. For the chocolate sponge cake, sift together the cake flour, cocoa powder, sugar, baking powder, and salt in another large bowl, then add the yolks, oil, milk, and vanilla, and mix them until smooth and combined.

Step 3

In a separate bowl, beat the egg whites and sugar until stiff peaks form, then add a dollop of beaten egg whites to the chocolate batter, and give them a good mix before putting in the remaining egg white mixture. Continue to mix until homogenous and scrape the sides and bottom, then pour the flan over a sieve onto the prepared pan, and place the chocolate batter gently in an even layer.

Step 4

Tap the cake pan on the counter a few times, then place the cake in a bain-marie, and bake it in the preheated oven for about 50 to 60 minutes or until a toothpick inserted at the center comes out clean. Let the cake cool down completely or chill it in the fridge, then serve, and enjoy!
