Somoas are also known as Caramel deLites, and they are one of the most popular Girl Scout Cookies. The cookie has a buttery and crumbly texture that is perfect with the toppings. I couldn’t count how many pieces I had eaten when I made this at home as it’s so good, but I know I’ve eaten much more than I should have and only left a few pieces for everyone.

For the topping:

Start by creaming the butter and sugar in a mixing bowl.
Get another bowl and sift together flour, baking powder, and salt.
Add the dry ingredients to the creamed butter and sugar. Mix until well incorporated. It should be crumbly.
Mix in the milk and vanilla. Transfer to a cling wrap and wrap well. Refrigerate for 30 minutes.
After 30 minutes, roll out the cookie dough and cut out your cookies. Place them on a baking sheet lined with parchment paper. Put inside the oven and bake for about 10 to 13 minutes at 350F. Once done baking, set them aside to cool.
Add the caramel, salt, heavy cream, and vanilla in a heatproof bowl and microwave for 2 minutes. Save 1/4 cup of the melted caramel, then add the remaining to the toasted coconut.
Once the cookie is cool enough to touch, spread the reserved caramel on top, then add a layer of the caramel coconut.
Dip the bottom into the melted chocolate and drizzle the chocolate over the top. Let the chocolate set then it’s ready to serve. Enjoy!
