Homemade French onion soup is an easy classic soup made with caramelized onions. Joshua Weissmann’s tutorial on YouTube shows how to make this French onion soup using homemade beef stock. However, you can use the pre-made beef stock, but it makes such a difference when you make your own. I love how this soup is so simple, and there are really no crazy ingredients to make this. It’s one of those soups that just include onions and beef stock. Also, the way you serve it is the most important part. This is a great soup with a toasted baguette and lots of cheese. I’m not a big onions person, but the broth looks amazing especially topped with loads of melted cheese.

Ingredients:

  • 3 tablespoons unsalted butter
  • 1 tablespoon extra virgin olive oil
  • 3.5 lb sweet onions/Vidalia onions (about 5-6 large)
  • salt to taste
  • 2 tablespoons bourbon
  • 11/4 cup white wine
  • 1.5 quarts good beef stock
  • 1 bunch thyme
  • 3 tablespoons dry sherry *optional*

To finish:

  • 2 tablespoons unsalted butter
  • 2 oz gruyere
  • 2 oz gouda
  • baguette slices or bread slices

Directions:

First, peel and slice the onions very thin. Slice them against their natural rings, not with its natural rings. Then, add the unsalted butter and olive oil to a pot over medium heat, add the onions with salt. To caramelize the onions, stir the onions frequently and fluctuating the heat from medium to low. Also, if you want to speed up the caramelization, add sugar. The onions get really soft over time and make sure to fold them because they can get mushy.

Next, deglaze with bourbon and let that reduce. Then, add white wine and let that come to a boil. Add the beef stock, season with salt, and bring it up to a simmer. Continue to watch Joshua Weissmann tutorial on YouTube for further instructions and details.
