Easy Quinoa Bowl Ingredients

For cooking the quinoa:

  • 1 cup of toasted quinoa
  • 1 1/4 cup of water

Other ingredients:

  • 1 cup of red bell pepper (thinly sliced)
  • 1 cup of purple cabbage (shredded)
  • 1 cup of carrot (julienne)
  • 1 cup of cucumber (cut into small pieces)
  • 1/2 cup of red onion (chopped)
  • 1/2 cup of green onion (chopped)
  • 1/2 cup of cilantro (chopped)
  • 1/2 cup of toasted peanuts

Salad dressing ingredients:

  • 3 tablespoons of lemon juice or to taste
  • 1 teaspoon of ginger (minced or grated)
  • 1/2 teaspoon of garlic (minced or grated)
  • 2 tablespoons of soy sauce
  • 2 tablespoons of maple syrup
  • 2 tablespoons of toasted sesame oil
  • 1 tablespoon of olive oil
  • salt to taste
  • 1/4 teaspoon of cayenne pepper

How to Make a Protein Quinoa Bowl

Step 1:

Prepare the vegetables and set aside for later.

Step 2:

Place a pan over medium heat and toast the quinoa for about 2 minutes or until they start to crackle and have a nutty aroma. Immediately transfer to a sieve. Spread out and allow to cool down completely.

Step 3:

Once the quinoa has cooled down, wash it thoroughly, then place it on a wide pan. Add the water and turn the heat to medium-high. Let it come to a boil. Once boiling, turn the heat to low and cook for about 10 minutes or until cooked. Make sure not to overcook it. Immediately transfer to a bowl and spread evenly. Allow to cool completely.

Make the dressing. Combine all ingredients in a small bowl and mix well. Set aside.

Step 5:
