Ingredients:

  • 8 medium red-skinned potatoes
  • 4 celery ribs, chopped
  • 1 medium carrot, chopped
  • 1/2 cup of frozen peas, defrosted
  • 2/3 – 3/4 cup chopped onion
  • dill (or other herbs to taste)

For the dressing:

  • 1 cup vegan mayo
  • 1 – 2 garlic cloves, minced
  • 1 tsp sea salt
  • 1/2 tsp black pepper

Directions:

Step 1

Wash the potatoes and cut them into bite-size pieces. Place them in a steamer and steam them for ten to fifteen minutes. While waiting for the potatoes, cut the rest of the ingredients and combine them in a bowl, then add the defrosted peas. Back to the potatoes, remove them from the heat, and let them cool down for a few minutes.

Step 2

In a small bowl, add the mayo, 2 cloves of minced garlic, salt, and pepper. Mix well. After the potatoes have cooled for a few minutes, add them to your chopped vegetables and mix everything well with the dressing. Add your freshly chopped herbs and toss the salad one last time before serving.
