I am also a fan of creamy salads. Aside from this recipe, I love making this Cucumber Salad Recipe and this Broccoli Salad with Bacon. They are all delicious. But what I love most about this chicken salad is that it is packed with meat, vegetables, fruits, and nuts, so you have everything in just one meal! The homemade dressing is also flavorful and low in fat. What more can you ask for?
You can enjoy it as is or serve it with any bread you like to make a creamy chicken sandwich.

In a mixing bowl, combine oil, salt, pepper, garlic powder, oregano, and paprika. Mix until well combined. Place the chicken in the bowl and mix until fully seasoned. You can cook it right away but you can also let it marinate for an hour if you have time.
Place a large pan or skillet over medium heat, then add the oil. Once hot, add the marinated chicken and cook for 4 to 5 minutes on each side, or until cooked through. Transfer to a plate and set aside to cool. Prepare the vegetables.
In a large bowl, add the celery, apple, cranberries, green onion, red onion, parsley, almonds, and lettuce.
Slice the chicken breast into small pieces then add to the salad.
Make the dressing by adding all the ingredients in a small bowl and mixing until well combined.
Pour the dressing over the salad and toss to combine. Serve and enjoy!
