This recipe is quick and easy, as it uses a box of cake mix. You can make it taste homemade just by substituting some ingredients. For this recipe, you will be using coconut oil and pineapple juice instead of plain water and cooking oil. Preheat your oven to 350F.
Add all the cake ingredients in the bowl of your stand mixer except the pineapple and coconut. Mix until well combined.
Add the coconut and pineapple to the batter. Mix until well combined.
Prepare 2 round pans by lining them with parchment paper. Equally divide the batter into the prepared pans. Tap to remove air bubbles.
Place inside the preheated oven and bake for 40 minutes or until a toothpick comes out clean. Remove from the pan and let it cool.
Make the filling. Cream the butter and cream cheese together. Add the sugar powder and mix until well combined. Add one teaspoon of milk and mix until smooth.
Add the coconut and pineapple to the filling and mix well.
Spread the filling on top of one cake, then top with the other. Cover the whole cake with the filling. Chill in the fridge for a few hours. Serve and enjoy!
