This French onion grilled cheese sandwich is loaded with everything you love about fresh onion soup. Coley Cooks on YouTube shares with us this mashup recipe that results in a dish that is buttery, crunchy, and loaded with sweet, caramelized onions. Plus, it is absolutely oozing with melted cheese that becomes the tie of the whole sandwich. It’s great to serve and enjoy with a picnic or snack with your loved ones.

Ingredients:

  • 2 tbsp salted butter
  • Onions, thinly sliced
  • Water
  • Fresh thyme
  • Salt
  • Pepper
  • Worcestershire sauce
  • Sugar
  • Cherry vinegar
  • Thick slices of bread
  • Swiss cheese

Directions:

Prepare all the needed ingredients.

Melt 2 tbsp of salted butter in a heated skillet and then add some thinly sliced onions. Cover the skillet and let the onions soften.

When the onions are softened, add a little bit of water, fresh thyme, salt, and pepper to taste, and a dash of Worcestershire sauce. Mix all the ingredients together until well combined. Cover the pan and let the mixture cook until the onions are deep-coloured brown.  When done, add a pinch of sugar and some cheery vinegar.

To assemble the sandwich, spread a generous layer of the onion mixture on thick slices of bread. Then, top with a folded Swiss cheese slice and another layer of the onion mixture. Repeat the layering as much as you want and top the sandwich with another thick slice of bread. Spread some butter on one side of the thick bread and place the sandwich in a heated skillet. Make sure to cook each side on low heat.  Spread a layer of butter on the top bread of the sandwich that has no butter and flip it. Add a splash of water to the pan and cover to let the sandwiches cook until the cheese melts.

When done, transfer the sandwiches to a counter and slice them in half.
