This slow cooker beef pot roast french dip recipe from Cooking With Claudia is absolutely delicious! I made it last night for dinner, and it turned out even better than we expected. The flavors blew our minds. The beef was so rich and tender, perfectly complemented with the melted cheese. Dip it into the sauce for some added flavor.

This recipe is easy to make and comes together quickly. It starts by searing the meat and then making the sauce. Both are added to the slow cooker and are cooked for 8 hours. Once cooked, the beef is shredded and added to the toasted bread, then topped with cheese. It’s super simple to prepare and absolutely worth making.

Start by seasoning the chuck roast with salt and black pepper on all sides.
Drizzle olive oil over a skillet over medium-high heat. Once the oil is hot, add the chuck roast one at a time. Allow it to sear for 3 minutes on one side, then flip it over, and sear on the other side for 3 minutes. Make sure to sear the sides too.
Once the meat is seared, transfer it to a slow cooker.
In the same pan, add the sliced onion and sauté over medium heat until it cooks down. Add the minced garlic and cook for 30 seconds. Next, add the beef broth, red wine, Worcestershire sauce, soy sauce, dried herbs, spices, and fresh bay leaves. Mix everything well, then pour all over the meat.
Place the lid and cook for 8 hours.
Once done, use a spoon to skim off the excess oil. Transfer the meat to a plate and shred the meat using two spoons. If you find any excess fat, make sure to remove it. Transfer the shredded meat back to the slow cooker. Mix and let it soak for 30 minutes with the slow cooker turned off.
Slice the hoagies and brush with melted butter on all sides. Place them in a 375F preheated oven and toast for 5 to 7 minutes.
While the bread is toasting, scoop some of the sauce from the slow cooker and pour it into a bowl with a strainer. This will be the dipping sauce for the sandwiches.
Once toasted, add some shredded meat to each bread, then top with swiss cheese. While the oven is still heated at 375F, place the sandwiches back in the oven and bake for 3 minutes or until the cheese has melted.
