If you have some veggies left and don’t know what to do with them, you might want to try this vegetable soup recipe from Donal Skehan on Youtube. This soup recipe is completely adaptable, so you can use whatever veggies you currently have. This hearty recipe will also surely warm up your family on a cold fall evening. Ingredients:

  • 1/4 stick butter
  • 1 onion, peeled and diced
  • 1 leek, sliced
  • 3 potatoes, peeled and diced
  • 50 fl oz of vegetable stock
  • 2 carrots, diced
  • 1 parsnip, diced
  • 4 sticks of celery, sliced
  • 1/2 cup cream, optional
  • 1 & 1/3 cups of frozen peas
  • sea salt and freshly ground black pepper

Directions:

Step 1

First, peel and chopped all of your vegetables and set them aside. Next, in a soup pot, add 1/4 stick of butter and 2 tbsp of olive oil. Once the butter melts, add your chopped veggies, season with salt and pepper, and cook them for about six to seven minutes until they softened. After this, pour the vegetable stock and bring it to a nice and steady simmering point. Once it’s up to that point, cook it for about 10 to 12 minutes or until the veggies are nice and tender.

Step 2

After 12 minutes, puree the soup using an immersion blender, then add 1/2 cup of cream and 2 cups of frozen peas. Taste-test the soup at this point and add salt and pepper if necessary.
