Ingredients:

  • 9 eggs
  • 1/3 cup cottage cheese
  • 4 oz sharp cheddar
  • salt and pepper, to taste
  • 2/3 cup of mixed cooked veggies
  • 1/2 cup of cooked crumbled bacon

Directions:

Step 1

Grease your muffin pan with some cooking spray and line each cup with parchment paper. Set it aside. Next, add nine eggs into your blender along with 1/3 cup cottage cheese, 4 oz sharp cheddar, and some and and black pepper to taste. Pop the lid on and blend for about a minute straight. Once done, divide the blended eggs to the prepared muffin pan, then add some veggie and bacon filling to each cup.

Step 2

Now, place the muffin tin to a bigger pan and pour some water to surround the muffins. Place in the oven at 325 degrees F and bake for 20 to 25 minutes. After baking, remove the muffins from the oven and let them cool down completely. Serve and enjoy!
