Ingredients for Strawberry Rhubarb Crumble:

  • 4 cups of chopped rhubarb
  • 2 cups of quartered strawberries
  • ¾ cup of granulated sugar
  • 1½ tbsp of cornstarch
  • 2 tbsp of fresh orange juice
  • 1 cup of all-purpose flour
  • ¾ cup of light brown sugar
  • ¾ cup of old-fashioned rolled oats
  • ¾ tsp of ground cinnamon
  • ½ tsp of kosher salt
  • 8 tbsp or 1 stick of unsalted butter, cold and cut into small pieces

Step 1

Preheat your oven to 350°F, then grease a 9-inch baking dish with butter, and set it aside. In a large bowl, add the rhubarb, strawberries, white granulated sugar, orange juice, and cornstarch, then stir everything together until well combined, and transfer the mixture into the prepared baking dish.

Step 2

In the same bowl, add the flour, brown sugar, oats, cinnamon, and salt, then mix them until incorporated, add the cubed cold butter, amd work them into the mixture until pea-sized and the consistency resembles wet sand,

Step 3

Spread the streusel over the filling evenly, then place the crumble in preheated oven, and let it bake for about 50 to 60 minutes or until bubbling and golden. Once done baking, let the crumble cool for about 1 to 2 hours, then serve, and enjoy!
