Rinse the zucchini under cold water and pat dry them completely. once they are dry, cut them into rounds that are half an inch in thickness. Place them in a single layer and season with sea salt on both sides. Transfer them to a colander and leave them for exactly 30 minutes. Now, while waiting for the zucchini, grab six cloves of garlic. Remove the skin from each clove and roughly chop them as well as 1/4 cup of fresh parsley. Place them into a mortar and add a pinch of sea salt. Pound them for at least 30 to 45 seconds or until they are well combined, then set them aside. Back to the zucchini, put them in a single layer on top of some paper towels. Then, gently pat them down with a paper towel to remove any excess water. Once all the excess water has been removed from the slices of zucchini, season them with freshly cracked black pepper just on one side.

Now, heat a pan over medium-high heat for between two to three minutes, then add 2 tbsp of extra virgin olive oil. Start adding the slices of zucchini in a single layer. After about two and a half minutes, flip them one by one, then continue cooking the other side for another 2 and a half minutes. After this, remove them from the pan and transfer them to a plate lined with a paper towel. Lower the heat to low-medium and add 1 tbsp of extra virgin olive oil. Add the parsley mixture to the pan, and stir it continuously between 20 to 25 minutes. After this, transfer the mixture to the slices of zucchini.
