Whenever I’m asked to prepare for dinner, I always opt for tasty dishes that are hassle-free and very easy to prepare. This week, I chose this recipe by Cooking With Claudia on YouTube to prepare for the whole family. It’s a very delicious pot roast with meat that falls off the bone and sauce that is so flavorful that you’d want to consume all of it until there’s none.

This dish is also very hearty and is sure to satisfy your tummy and leave you full, plus, you can also serve this on a special occasion or gathering, and add more veggies or use a heavier pork if you want to make a larger portion to feed a crowd. While you’re waiting for this to cook, you can also prepare other dishes that you want to serve along this pot roast.

Ingredients for Slow Cooker Pork Roast:

  • 5-6 pounds of pork butt or shoulder
  • Salt and pepper, to taste
  • 2 tsp of oregano
  • 1 tsp of cumin
  • 1 tsp of chili powder
  • 1 tsp of onion powder
  • 1 tsp of garlic powder
  • 3 tbsp of olive oil, or more as needed

Sauce

  • 3 tbsp of butter
  • 1 large onion, minced
  • 6 cloves of garlic, minced
  • 3 tbsp of flour
  • 1½ cups of Worcestershire sauce
  • 1/3 cup of sweet chili sauce
  • chicken bouillon cubes

Other

  • 4 large carrots, cut into small pieces
  • 10 baby potatoes
  • Fresh thyme
  • 4-5 sprigs of rosemary

How to Make Slow Cooker Pot Roast:

Step 1

In a small bowl, mix the salt, black pepper, oregano, cumin, chili powder, garlic powder, and onion powder until uniform, then sprinkle the seasonings over the pork until all sides are coated, and set the meat aside.

Step 2

Place a skillet pan on a stove over medium-high heat, then add the olive oil, as soon as the oil gets very hot and smoky, add the pork. Sear the pork for about 2-3 minutes per side, then transfer it to a slow cooker, and in the same skillet, add the carrots and potatoes.

Step 3

Season them with salt and pepper, then give them a good toss, and cook them for about 5 minutes or until caramelized. Transfer the veggies to the slow cooker as well, then back in the skillet add the butter, and allow it to melt before adding the onions.

Step 4

Saute them for about 2 minutes, then add the garlic, and saute for 30 more seconds until fragrant. Add the flour, then toss and cook for about 1 minute until the flour taste is gone, and pour in the apple juice.

Step 5

Whisk them around until incorporated and cook the sauce until thickened, then add the sweet chili sauce, Worcestershire sauce, and chicken bouillon cubes, and continue whisking until combined.

Step 6

Allow the sauce to simmer for about 1 minute, then pour it over the pork, and give the slow cooker a good shake to help the sauce get to the meat. Place the rosemary and thyme on top of the meat, then cover the pot with the lid, and let the pork slowly cook for about 8 hours. Serve and enjoy!
