Step 1
Place a large oven-proof skillet on a stove over medium heat, then add the olive oil, and heat it before adding the chopped onion and cubed chicken. Stir and cook them for about 5 minutes or until they start to brown a bit, then season them with salt and pepper to taste, add the garlic, and continue to cook for 30 more seconds or until fragrant.

Step 2
Add the rice, cream of chicken soup, and chicken broth, and bring it to a boil, reduce the heat, then cover it with the lid. Allow it to cook over medium heat for about 15 minutes or until the rice is cooked through, make sure to stir occasionally, then adjust the seasoning to taste if needed.
Step 3
Add the broccoli and half of the cheese, then continue to cook for an additional 2 minutes or until the broccoli has softened, and then sprinkle the remaining half of the cheese all over the top. Place the skillet in the oven and broil it for a couple of minutes or until the cheese has melted and browned. Garnish it with freshly chopped parsley, then serve, and enjoy!
