Quesadilla is one of my favorite go-to dishes for lunch or dinner, and sometimes even breakfast. I just love eating quesadillas any time of the day or whenever I feel like it because it tastes so good and I can never get tired of it. There are a lot of different flavors and versions of quesadilla but the one that stands out the most for me is a cheesy shrimp quesadilla.

It’s very easy to make and only requires a few ingredients which most of you may already have in your kitchen, you can even use leftovers if you like, and modify the seasonings to your preference or whatever you have available. For now, learn the basic of preparing a delicious shrimp quesadilla with this recipe by Gimme Delicious on YouTube.
Step 1
Place a large skillet or pan on a stove over medium heat, then heat the olive oil, and saute the onion, bell pepper, and garlic for 1 minute or until softened and fragrant. Add the shrimp, then sprinkle the taco seasoning, and cook them for an additional 1 to 2 minutes or until the shrimp begins to turn pink.
Step 2
Transfer the cooked shrimp to a bowl, then rinse the pan, and wipe it down with a paper towel. Return the pan to the heat, then grease it with a nonstick cooking spray or brush it with vegetable oil, and place a tortilla down on the bottom.
Step 3
Sprinkle one side with cheese, then scoop about 5 to 6 shrimp, and place them over the cheese layer. Fold the tortilla in half, then cook each side for about 2 to 3 minutes or until golden and crispy. Repeat for the remaining tortillas, then serve with sour cream, salsa, or guacamole, and enjoy!
