Ingredients:

  • 14 oz canned sauerkraut
  • 2 tbsp Thousand Island dressing, plus more for dipping
  • 1/2 tsp caraway seeds (optional)
  • 12 Hawaiian rolls
  • 8 slices of Swiss cheese
  • 1/2 lb deli corned beef, thinly sliced
  • 1/2 cup unsalted butter, melted
  • 1 1/2 tbsp dried onion soup mix
  • 1/2 tsp poppy seeds
  • freshly chopped parsley, for garnish (optional)

Directions:

Step 1

Preheat your oven to 350 degrees F. Next, drain the sauerkraut well and transfer it to a medium bowl. Add 2 tbsp Thousand Island dressing and 1/2 tsp caraway seeds, mix them in with the sauerkraut, and set aside. Next, slice the Hawaiian rolls in half, then place the bottom part in a casserole dish.

Step 2

Add 4 slices of Swiss cheese, then the thinly sliced corned beef. Next, spread over the sauerkraut mixture, then add another 4 slices of Swiss cheese. Place the top part of the Hawaiian rolls, and set them aside. Next, combine 1/2 cup melted unsalted butter, 1 1/2 tbsp dried onion soup mix, and 1/2 tsp poppy seeds in a small bowl. Mix well. Brush this over the rolls, cover the casserole dish with foil, then bake in the preheated oven for 25 minutes.

Step 3

After 25 minutes, take the foil off and bake for an additional five minutes, or until browned. Once done baking, garnish with some freshly chopped parsley, then serve.
