This dish by Food Wishes on YouTube is so good and is one of the best ways to serve lasagna! I never thought of serving this soup version but I’m so glad that I tried it, even my family loved it so much that they asked me to make it more often for them. Step 1
Place a large pot on a stove over medium-high heat, then fill it with water, sprinkle some salt, and bring it to a rolling boil. Add the lasagna noodles, then give them a good stir, and continue to let it boil while uncovered while stirring occasionally. After 4 to 5 minutes or until flexible, transfer them to an ice bath to stop the cooking process, and then drain all of the excess water. Now, preheat your oven to 475°F or 245°C, then line a baking sheet with parchment paper, and grease it with about 1 tablespoon olive oil.
Step 2
Cut the noodles in half lengthwise, then lay them in the prepared baking sheet overlapping them in rows as shown in the video, and brush them with melted butter generously. Place the noodles in the preheated oven, then allow them to bake until golden and the edges are brown and crispy, let them cool down, and cut them into small bite-sized pieces. Place a soup pot on a stove over high heat, then heat up 2 tablespoons of olive oil, and add the beef and sausage breaking them apart nicely.

Step 3
Do not stir the meat and allow it to cook until the liquid evaporates, then give them a good stir, and allow them to cook for about 7 minutes or until browned. Add the onions, garlic, tomato paste, red pepper flakes, dried oregano, black pepper, and kosher salt, then give them a good mix to combine, and cook them for about 3 to 4 minutes or until translucent. Pour in the chicken broth, tomato sauce, and water, then bring them to a simmer, reduce the heat to medium-low, and continue to simmer for about 45 more minutes.
Step 4
In a mixing bowl, mix together the ricotta cheese, mozzarella cheese, and parmesan cheese until fully combined, and then set them aside for later. Increase the heat on the soup to medium-high, then add the noodles, and stir them together allowing the pasta to cook for 10 minutes or until tender. Reduce the heat to low, then stir in 2 tablespoons of Italian parsley, and turn off the heat. Serve them in a bowl with a scoop of cheese mixture on top, then garnish with freshly torn basil and parsley, and serve. Enjoy!
