A great meal isn’t complete without an equally delicious dessert, and today I will share with you one of my favorite go-to recipes that I’ll probably never get tired of. This yummy cheesecake by The Cooking Foodie on YouTube is super rich and creamy, and very easy to make, too. You can serve this after dinner or lunch, during snack time, or on special occasions!

Ingredients:

Crust

  • 26 pieces of Oreo cookies
  • ¼ cup of butter, melted

Filling

  • 2½ cups of full-fat cream cheese, at room temperature
  • 2/3 cup of sour cream
  • 12 to 16 pieces of Oreo cookies, crushed
  • 1 tsp of vanilla extract
  • ¾ cup + 2 tbsp of sugar
  • eggs, at room temperature

Directions:

Step 1

Preheat your oven to 165°C or 325°F, then place the Oreo cookies in a food processor, and pulse them until fine crumbs. Add in the melted butter, then continue to pulse until combined, and pour the mixture into a 9×9-inch baking pan lined with parchment paper.

Step 2

Press the crust down the bottom firmly, then place it in the preheated oven, and let it bake for about 10 minutes. In a large mixing bowl, add the cream cheese, vanilla extract, and sugar, then beat them until smooth and combined, add the sour cream, and continue beating until smooth.

Step 3

Add the eggs one at a time, then beat them until incorporated in between each addition, and add in the crushed Oreo cookies. Fold them in until evenly distributed and combined, then pour the filling on top of the baked crust, and spread it evenly.

Step 4

Sprinkle some crushed Oreos if desired, then place it in the oven, and bake it for 40 to 45 more minutes or until set. Remove it from the oven, then allow it to cool down to room temperature, and place it in the refrigerator to chill for at least 4 hours. Cut it into bars, then serve, and enjoy!
