Ingredients:

  • 2 tablespoons of oil
  • 1 onion, chopped
  • 4-5 cloves of garlic, crushed
  • 2 tablespoons of ginger, grated
  • 2 teaspoons of curry powder
  • ½ teaspoon of cumin
  • ½ teaspoon of turmeric
  • Salt, to taste
  • Pepper, to taste
  • 1 can (14 ounces or 400g) of Tomato sauce or crushed tomatoes
  • 3 cups (720ml) of water
  • 1 can (14 ounces or 400g) of coconut milk
  • 1 cup (190g) dried lentils
  • 1 teaspoon garam masala, optional
  • 1-2 tablespoons coriander leaves, chopped, optional

Directions:

Step 1

Prepare a large pan or pot and place it on a stove over medium heat, add in some oil and once it’s hot enough, saute the chopped onion until it turns lightly golden or for about 5 to 6 minutes. Add in the crushed garlic, grated ginger, curry, and turmeric, give them a good stir and let them cook for about 1 to 2 minutes. Add in the tomato sauce, coconut milk, water, salt, and pepper to taste, then add in the washed lentils as well (rinsed under cold water and drained well). Give them a good stir until well combined, then bring them to a boil.

Step 2

You can add some garam masala to taste if you want, it’s completely optional. Cover the pan or pot with a lid, then reduce your heat to low, and let it simmer for about 30 to 40 minutes. Check if the lentils are soft and the sauce is creamy, if it’s too thick then you can add in more water, if it’s too thin then let it simmer for about 10 to 15 more minutes without the lid or cover. Once it has reached the desired consistency, check the flavor if it needs more seasoning, then adjust the salt or pepper if needed. Turn off the heat and sprinkle it with some chopped coriander, give it a good stir then serve with rice, naan/ flatbread, or as is.
