Step 1
In a large mixing bowl, add the melted butter and cocoa powder, then stir them until well combined, add both sugars and continue to stir well until incorporated. Add the egg, egg yolk, and vanilla extract, then keep stirring, and set the mixture aside.
Step 2
In a separate medium-sized mixing bowl, whisk together the flour, baking powder, baking soda, and salt, then gradually add in the dry ingredients while stirring continuously until completely combined, and cover the dough with plastic wrap. Put it in the refrigerator, then let the dough chill for about 30 minutes, and while waiting preheat the oven to 350°F, line a baking sheet with parchment paper, and set it aside.
Step 3
Once the dough is ready, scoop it with a 2 tablespoon-sized ice cream scooper, then roll it into a smooth ball, and place it in the prepared baking sheet spacing it apart at least 2 inches evenly. Place it in the center rack of the preheated oven, then let it bake for about 10 to 11 minutes, then remove it from the oven, and after 1 minute, gently flatten each cookie.
Step 4
Let the cookies cool completely, then while waiting, beat the butter in a large mixing bowl until smooth and creamy, gradually add the sugar, and keep stirring over low speed until completely combined. Add the salt, vanilla extract, and peppermint extract, then give them a good stir, add the food coloring, and continue to stir until evenly incorporated.
Step 5
In a microwave-safe bowl, add the chocolate and heavy cream, then heat them in the microwave on a high setting for about 25 seconds, and stir well before putting them back in the microwave to heat for an additional 25 seconds. Stir it again until smooth, then spread the mint frosting on top of each cookie, and top it with the ganache. Let the chocolate set, then serve. and enjoy!
