Cookies are one of the easiest pastries that you can ever make and they only require a few simple ingredients, but it is also delicate and might take some time for others to get the right texture. There are also other ways that you can bake cookies if you don’t have an oven or you simply don’t want to bake everything at once.

With the help of your microwave oven, you can bake these soft chocolate chip cookies by HidaMari Cooking on YouTube. It makes the cookies slightly darker and larger but it makes no difference in the taste, but if you want your cookies to have a slightly crispier surface, you can still bake them in the oven.
Step 1
Add the butter and milk chocolate pieces in a bowl, then place the bowl over another bowl filled with hot water, and stir the butter and chocolate until completely melted.
Step 2
In another bowl, add the egg, light brown sugar, and salt, then whisk them until incorporated, and transfer them to the chocolate mixture.
Step 3
Continue to whisk them until well combined, then add the rice flour, ground almonds, and potato starch, and fold them until fully combined and no flour streak remains.
Step 4
Leave the cookie dough in the bowl, then place it in the freezer, and leave it for about 10 minutes.
Step 5
Divide the cookie dough into 60-gram or 2-ounce portions, then fill them each with chopped milk chocolates evenly, and place them on parchment paper cut into small 4-inch squares.
Step 6
Flatten each cookie until 7cm or 2.75 inches in diameter, then cook it in the microwave oven at 500W for 1 minute or bake it in an oven preheated at 160°C or 320°F for about 10 to 13 minutes. Serve and enjoy!
