Peanut butter and chocolate is one of my all-time favorite flavors, spread, or filling, I can eat a lot of serving in one sitting because they just taste so good. I was so delighted when I found this recipe by How Tasty on YouTube because it fuses two of my favorite flavors in one cookie, plus, contrary to the usual chewy and crumbly cookie, this one is softer and easier to chew.

Ingredients:

  • 17 tsp of peanut butter, creamy classic, without sugar
  • ½ cup of unsalted butter, at room temperature
  • 1 tsp of vanilla extract
  • ½ cup of brown sugar
  • ¼ cup of caster sugar
  • 1 small egg, at room temperature
  • 1/3 cup of unsweetened cocoa powder
  • 1½ cups of all-purpose flour
  • ¼ tsp of salt
  • ½ tsp of baking soda
  • 1/3 cup of chocolate chips

Directions:

Step 1

Line a baking sheet with parchment paper, then scoop 17 large teaspoons of peanut butter, and make sure to space them evenly. Place them in the freezer, then allow them to harden for about 30 minutes or until completely frozen, and while waiting, prepare the cookie dough. In a large mixing bowl, add the butter, vanilla, brown sugar, and caster sugar, then mix them all using a spatula until creamy and combined, add the egg, and continue to mix them until incorporated.

Step 2

In a medium-sized mixing bowl, sift together the flour, cocoa, salt, and baking soda, then mix them all until well combined, and incorporate this flour mixture into the butter mixture in 2 batches, making sure to mix them well in between each addition but do not overmix. Add the chocolate chips to the dough, then mix to combine, and place it in the refrigerator letting it chill for about 30 minutes or up to overnight. Get a 5-cm or 2-inch ice cream scoop, then scoop the dough into a ball, and flatten it in your palm. Place a frozen peanut butter in the center, then fold the edges over to cover the filling well, and roll it into a ball.

Step 3

Repeat the same process with the rest of the dough and filling, then place the cookie balls onto a lined baking sheet spacing them evenly, and then place them in a preheated oven at 180° or 350°F. Let them bake for about 9 minutes, then remove them from the oven, and immediately place the chocolate chips all over the top while the cookies are still hot. Allow the cookies to rest for about 10 minutes, then remove them from the baking sheet, and let them cool down completely on a wire cooling rack. Serve and enjoy!
