Step 1
Prepare the carrots, then add them to a baking sheet, and mix the honey, sriracha, olive oil, salt, and black pepper until incorporated. Pour the maple sauce over the carrots, then give them a good toss, and place the chickpeas on a separate baking sheet in a single layer.
Step 2
Place them both in a preheated oven, then allow them to bake at 425°F or 200°C, and after 10 minutes, remove the chickpeas from the oven. Add the olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper, then give them a good toss, and put them back in the oven to bake for an additional 20 to 25 minutes or until crispy.
Step 3
Roast the carrots for a total of 30 minutes, then toss them once halfway, and finish cooking until the edges are caramelized and soft. In a plate, mix the yogurt, garlic, lemon juice, olive oil, and salt until uniform, then place the carrots on top, and garnish with chopped herb and toasted pistachios. Serve and enjoy!
