Step 1
Prepare all of the ingredients, then put the shredded carrots, celery, onion, and garlic in the crockpot, and place the chicken breast over the veggies. Season them with salt, pepper, and crushed red pepper, then place the butter, and pour in the chicken stock. Place the tied thyme, then squeeze over the lemon, and cook them on a high setting for about 4 hours or on a low setting for about 8 hours.
Step 2
After cooking for about 3 hours and 30 minutes or 7 hours and 15 minutes, remove the chicken from the crockpot, and shred it. Put the shredded chicken back into the crockpot, then add the rice to finish cooking for about 30 to 45 more minutes. Sprinkle the fresh parsley, then mix well, and serve immediately. Enjoy!
