This recipe only uses simple ingredients you can easily find in your pantry or your local grocery stores. It does not require any special ingredients. The star of this taco is the potato. In other recipes, they fry the potatoes after boiling them, but for this one, you will be mashing and mixing them with onion, red pepper, seasonings, and parmesan cheese. This will make the tacos more delicious and packed with flavors.

Peel and chop the potatoes and place in a pot filled with water with 1 teaspoon of salt. Boil until fork tender. Drain and transfer to a bowl. Mash the potatoes and mix in 2 tablespoons of parmesan.
Add 2 teaspoons of butter into a pan over heat or 1 teaspoon of olive oil. Once melted, add the chopped onion and chopped bell pepper. Cover and cook over low heat for 3 minutes.
Season with paprika, black pepper, and salt. Add 2 tablespoons of water. Cover and cook for 5 to 7 minutes.
Add the vegetables to the mashed potatoes. Mix until well combined.
Add the tomato sauce and mozzarella cheese in separate bowl.
Get one tortilla and spread tomato sauce. Add shredded mozzarella cheese on one side, then a layer of the potato mixture. Add more shredded mozzarella cheese, then fold. Repeat with the remaining tortilla breads.
Add 2 to 3 tablespoons of vegetable oil in a pan. Fry until golden brown and crisp on both sides. Top with fresh or dried parsley. Serve and enjoy!
