In a medium bowl, add the flour, sugar, baking powder, and salt. Whisk until well combined.
In a large bowl, add the milk, egg yolk, and melted butter. Whisk well, then gradually add the flour mixture. Mix until smooth.
Pour 2 to 3 inches of oil into a large pot and place over medium/high heat. Heat the oil until it reaches 375F.
Place the 1/4″ thick apple rings into a shallow dish. Add the lemon juice and gently toss the apples to coat.
In a medium bowl, beat 2 egg whites until stiff peaks form. Make sure not to over beat. Transfer to the batter and gently fold until fully incorporated.
Remove apple sliced from the lemon juice, one at a time. Allow the excess juice to drip into the bowl, then dip both sides in the batter. Allow excess batter to drip.
Add the coated apple in hot oil and fry in batches in a single layer for about 2 minutes per side. Make sure not to overcrowd them. Keep the oil above 350F while frying.
Using a strainer, remove the apple fritters, and transfer to a paper towel-lined plate to absorb excess oil. Dust with powdered sugar or coat both sides in cinnamon sugar mixture.
