I’ve tried many versions of pudding and cake before because they are the best and my absolute favorite foods to enjoy for dessert and even for breakfast, depending on the type of cake. There are a lot of recipes that you can find online and learn but if you want to try the best of both worlds, then whip up this creamy caramel pudding cake by HidaMari Cooking on YouTube.

This dish is so good, the creamy pudding is perfectly balanced by the soft cake underneath it, and it was made even more delicious by the caramel on top. This is definitely a food that you can never get tired of eating and is very delicious up to the last bite. Surely, if you serve this at any event, party, occasion, or even when there’s none, it will be gone in just a few minutes, that’s how good this treat tastes!

Step 1
Place a saucepan on a stove over medium heat, then add in the water and granulated sugar, and heat until the sugar has caramelized. Turn off the heat, then remove the saucepan from the stove, and add in the hot water to loosen the caramel. Pour the caramel into a baking dish, then spread it evenly, and set it aside while preparing the pudding mixture.
Step 2
In a large bowl, beat the eggs, then whisk in the granulated sugar until smooth and incorporated, and set it aside. Put the saucepan where you made the caramel back on the stove, then add in the milk and sugar, and heat the mixture until the caramel has dissolved into the milk. Turn off the heat, then pour the hot milk into the egg mixture while stirring continuously, and mix in the vanilla extract.
Step 3
Strain the mixture over to a measuring cup or similar and set it aside, then in another bowl, add the milk, cake flour, cocoa powder, and egg yolks, and give them a good mix. In a separate bowl, add the egg whites, then add in the sugar gradually, and beat in between each addition until soft peaks form. Add the meringue mixture to the egg yolk mixture, then mix them until well combined, and then set it aside.
Step 4
Now, pour the pudding mixture over to the caramel on the baking dish, then pour the sponge cake batter on top evenly, and place the baking dish on top of a jelly roll pan or roasting pan with a towel underneath and then pour with hot water. Allow the pudding cake in the hot water bath to bake in a preheated oven at 160°C or 320°F for about 50 minutes, then let it cool completely, and serve immediately or chilled. Enjoy!
