This easy corn casserole by The Stay At Home Chef will be on your weekly rotation. It is a mixture of cornmeal, creamed corn, corn kernels, sour cream, butter, and egg. You can never go wrong with this simple meal. It’s delicious and incredibly easy to prepare!

So, how do you make corn casserole? It’s actually super easy. Simply mix the dry ingredients in a bowl and the wet ingredients in a separate bowl, then mix them together. Pour the mixture into a greased baking dish, then bake in the oven.
Corn casserole can be made ahead of time. Just prepare the casserole a day ahead and place it in the refrigerator until ready to bake.
You can also freeze corn casserole. To do this, tightly wrap the casserole in plastic wrap and place it in your freezer for up to 3 months. When ready to serve, thaw in the refrigerator and reheat in the oven.
Serve corn casserole with grilled meats, barbecue dishes, roasted vegetables, or salads.

Start by preheating your oven to 325F and greasing a 9 x 9 baking dish.
In a large bowl, add the flour, cornmeal, sugar, and baking powder. Mix until well combined.
Add the drained can of corn, can of creamed corn, sour cream, melted butter, eggs, and chopped jalapenos. Season with a pinch of salt and pepper. Mix until well combined.
Pour the batter into the prepared casserole dish and place in the preheated oven. Bake for 50 to 55 minutes or until the center is set and not jiggly.
