I love making this bread and serving it when I have guests coming over as it’s a great snack, especially when paired with either a hot or cold beverage.

Step 1
In a large mixing bowl, add the coconut cream, water, sugar, egg, and instant yeast, then whisk everything until well combined, and add the flour and salt. Fold them until well mixed, then add the butter or coconut oil, and knead until fully absorbed and smooth. Cover the dough and set it aside for about 1 hour or until doubled in size.
Step 2
In another bowl, add the desiccated coconut, sugar, butter, and beaten egg, then mix them well until combined, add the vanilla extract, and continue mixing until incorporated. Grease a 9×5 baking dish or loaf pan with butter, then line it with parchment paper, and brush it with butter as well. Get the dough and sprinkle some flour on top, then punch the air out, and transfer the dough to a well-floured counter.
Step 3
Divide the dough into 4 equal parts, then shape each into a ball, and let them rest for about 10 minutes while covered. Roll out the dough in a floured counter as shown in the video, then place the filling in the center leaving some space around the sides, fold in the longer sides toward the center, and roll the dough over.
Step 4
Pinch the edges to seal, then do the same for the rest of the dough balls, and place them in the prepared baking dish. Score the top of the dough, then cover them, and set aside for about 20 to 25 minutes while preheating the oven. Brush the top of the bread with eggwash, then place it in the oven to bake at 170°C or 340°F for about 30 to 35 minutes, and brush it with melted butter on top. Serve and enjoy!
