Biscoff cookies and Biscoff spread are so good and I eat them all the time, especially for snack or even dessert time! So, imagine my excitement when I found out that you can make a delicious treat out of them, and it’s super easy and quick to prepare.

Step 1
Preheat your oven to 350°F, then line an 8-inch square baking pan with parchment paper, and grease it with butter before setting it aside. Put the chopped chocolate and butter in a heat-proof bowl, then place the bowl over a double boiler, and let the chocolate melt while stirring consistently.
Step 2
Set it aside and let it cool slightly, then in a large bowl, add the white sugar, brown sugar, eggs, salt, and vanilla extract, and beat them until light and fluffy. Slowly pour in the melted chocolate, then continue to mix until smooth and combined, and sift over the flour and cocoa powder.
Step 3
Fold them just until combined making sure not to overmix, then pour half the batter into the prepared pan, and follow 3 to 4 tablespoons of Biscoff spread over the top. Swirl them nicely as shown in the video, then pour in the remaining half of the batter followed by drizzling more Biscoff spread, and swirl again.
Step 4
Place the Lotus cookies in an even layer on top, then let them bake in the preheated oven for about 25 to 30 minutes, and let it cool down slightly before cutting into bars. Serve and enjoy!
