At every party, gathering, or holiday, my family and I would always look forward to stuffed mushrooms and we always make sure that we include them on our menu on that special day. Recently, this recipe by Rachel cooks with love ❤ has been one of my favorite go-to recipes because of its simplicity and deliciousness. They are so good that I don’t even wait for a special occasion to make them because I prepare stuffed mushrooms even on an ordinary day or whenever I crave them.

Ingredients:

  • White button mushrooms
  • ½ pound of mild Italian sausage
  • Olive oil
  • ¼ cup of chopped onions
  • 2 green onions, chopped
  • ⅓ cup of chopped mushroom stems
  • ¼ cup of orange bell peppers
  • ½ tsp of garlic powder
  • ½ tsp of onion powder
  • Black pepper, to taste
  • Chopped parsley, to taste
  • ½ tsp of red pepper flakes, optional
  • Salt, to taste
  • 1 large clove of garlic, minced
  • 4 ounces of cream cheese, at room temperature
  • 3 tbsp of parmesan cheese, freshly grated
  • ¼ cup of panko bread crumbs
  • ½ cup of Monterey jack cheese, freshly grated

Directions:

Step 1

Clean the mushrooms by dry brushing them until all the dirt is gone, then remove and snap off the stem of each piece, and scrape off the inside. Place a cast-iron skillet pan on a stove over medium heat, then add about 2 tablespoons of olive oil, and add the sausage. Break the sausage apart, then cook it until nice and brown, add the white onion and green onions, mushroom stems, and bell pepper, and give them a good toss to combine. Season them with garlic powder, onion powder, black pepper, chopped parsley, pepper flakes, and salt, then mix them together until well combined, make a center at the pan, then add the minced garlic, and let it cook for a few minutes making sure not to burn it.

Step 2

Give them a good mix, then remove the mixture from the pan, and transfer it to a large mixing bowl. Add the cream cheese, then break and fold them together before adding the parmesan, and continue to fold until well combined. Brush the outside of the mushrooms with olive oil, then stuff them with sausage mixture, and push it down gently. Sprinkle some bread crumbs on top, then push it down gently, and add some cheese on top, repeat this with the rest. Grease a pan or baking dish with 2 tablespoons of oil, then lay the stuffed mushrooms in a single layer, and bake them in a preheated oven at 400 degrees for about 20 minutes. At the last 5 minutes of baking, set your oven to broil, then let them continue to bake until the top is nice and golden. Serve and enjoy!
