Do you love beans? If you do, you have to try this easy charro beans recipe by Rachel cooks with love ❤. Some people may know this recipe as Rijoles Charros or cowboy beans. It has pinto beans, bacon, onions, tomatoes, jalapeño peppers, and smoked sausages, making this dish spicy and packed with flavors. If you are a fan of Mexican food, give this recipe a try.

This recipe is made by cooking the pinto beans first in salted water with cloves and garlic. Then, in a different pan, bacon, sausages, onion, green onion, garlic, cilantro, tomatoes, and jalapeños are sauteed to release all the flavors that will make this dish delicious. After that, the cooked pinto beans are added to the pan and cooked for a few more minutes before serving.
You can serve it with chicken, rice, fresh salsa, guacamole, and warm tortillas.
Charro beans with broth
In a pressure cooker, add the pinto beans, 1/2 medium onion, salt, 2 smashed garlic cloves, and 8 cups of water. Place the lid and set it on seal. Turn it on and set it on pressure cook on high for 40 minutes. Once done, let it sit for 10 minutes and let it do a natural pressure release. After that, do a quick pressure release. Open it.
Discard the onion and garlic. Then transfer the beans and broth to a different container.
In the same clean pressure cooker, press the power button, press sear/saute, set the temperature to medium-high, then press start. Give it a couple of minutes to get hot. Once hot, add the bacon. Spread well. Leave it until it sears nicely. Add chopped onion and green onions. Saute until translucent. Add the sausages and fry for a little bit. Add garlic powder, onion powder, and garlic. Stir for 1 minute, then add tomatoes. Cook until mushy. Next, add jalapeños and cilantro. Mix for 1 minute.
Bring back the beans and the broth. Add tomato-flavored chicken bouillon. Mix to combine. Place the lid and turn it back on for 5 minutes. Once done, do a quick pressure release, before opening. Serve and enjoy!
