Summer would not be complete without a delicious salad, and this summer salad from Catherine’s Plates on Youtube is guaranteed the ultimate recipe! This salad has broccoli and cauliflower, and the dressing is composed of just four ingredients. It’s super quick and easy and will surely make your summer days more memorable. Ingredients:

  • 2 broccoli crowns (chopped)
  • 1 cauliflower head (chopped)
  • 1 red onion (diced)
  • 1/2 lb bacon (cooked)
  • 1 cup shredded cheddar cheese

For the dressing:

  • 3/4 cup mayonnaise
  • 1 cup sour cream
  • 1/2 cup sugar
  • 1/2 tsp salt

Directions:

Step 1

To start, rinse off the cauliflower and broccoli and chop them into bite-size pieces. Place 1/2 lb of bacon into a sheet pan and bake it under 435 degrees F for 15 to 18 minutes. Next, put the chopped cauliflower in a pot with a steamer basket to steam them. Set the burner to high heat, let it boil, then lower the heat and steam it for four minutes. Transfer it to a paper towel-lined bowl and then steam the chopped broccoli next. After this, dice half of 1 large red onion and add them to the same bowl together with the steamed cauliflower and broccoli.

Step 2

Next, cut the crisped-up bacon into bite-size pieces and add them to the bowl followed by 1 cup of shredded cheddar cheese. Mix it all well to combine. In a small bowl, add 3/4 cup of mayonnaise, 1 cup sour cream, 1/2 cup of white granulated sugar, and 1/2 tsp of salt. Blend it all well. Add this dressing to the salad and toss it well.
