Ingredients for Brie Dauphinoise Potatoes:

  • 1½ cups of heavy cream, full-fat
  • 2 cloves of garlic, finely minced
  • 2 tbsp of unsalted butter, melted
  • 1.25kg or 2.5 pounds of Russet potatoes
  • 1 tsp of kosher salt
  • ½ tsp of black pepper
  • 2 tsp of thyme leaves
  • 4 ounces of Brie cheese, fridge cold, cut in half horizontally

How to Make Brie Dauphinoise Potatoes:

Step 1

Put the butter, cream, and garlic in a large measuring cup or mixing bowl, then stir them until well combined, and set the mixture aside. Preheat your oven to 350°F, then peel and slice the potatoes into 1/8-inch rounds, and cut the cheese through in half horizontally. Place 1/3 of the potato slices on the bottom of a baking dish spreading them evenly, then put 1/3 of the cream mixture over them, and sprinkle 1/3 of the salt, pepper, and thyme leaves on top.

Step 2

Repeat the layer two more times, then cover the baking dish with foil, and put it in the preheated oven. Allow the potatoes to bake for about 1 hour and 20 minutes or more until the middle is soft, then remove the foil, and place the half Bries on top with their cut side down. Put the baking dish back into the oven, then allow it to bake for an additional 30 minutes until the Brie is melted and the edges are light golden brown. Let it cool down for at least 5 minutes, then serve, and enjoy!
