Berry Filling
Step 1
Preheat your oven to 400°F, then unroll the shortcrust pastry, and place it in a round pie dish nicely. Trim the excess around the edges, then poke holes all over the bottom with a fork, place a large parchment paper over the crust, and fill it with baking beans. Place the dish in the oven and bake it for about 20 minutes, then remove it from the oven, and allow it to cool down a little bit. Remove the baking beans and parchment paper, then let it cool down completely.

Step 2
Once the crust has cooled, preheat your oven to 375°F, then prepare the crumble topping. In a large bowl, mix together the flour, baking powder, and cold butter cubes using your hands until crumbly, then add the sugar, salt, egg, and vanilla extract, and keep mixing with your hands until fine crumbs. Set it aside. In a medium-sized mixing bowl, add the blueberries, sugar, lemon juice, cornstarch, and flour, then give them a good toss until evenly combined, and transfer them above the baked crust.
Step 3
Sprinkle the crumble mixture over the blueberries and spread them evenly, then put the pie in the oven, and allow it to bake for about 45 minutes. After 25 minutes of cooking, cover the top with foil to prevent it from browning too much, then once done baking, remove it from the oven, and let it cool down at room temperature for about 3 to 4 hours. Serve warm or cooled, and enjoy!
