During the hot season, I always make sure to store different kinds of cold desserts in the fridge so that I and my family can eat them whenever we want to feel refreshed or simply when we’re craving. One of the desserts that I love is this delightful pie by Cooking with Brenda Gantt on YouTube which you can make into any flavor that you want and it is also very easy to prepare. Plus, you can also make this ahead if you’re having a party or simply a family mealtime the next morning.

Ingredients:

  • 1 cup of pecan nuts, chopped
  • 1¼ cup of plain or all-purpose flour
  • 1 stick of butter, melted
  • 2 blocks of cream cheese
  • 2 cups of sugar
  • 1 (8 oz) tub of cool whip
  • 2 cans of blueberry pie filling, or any flavor you want

Additional

  • 1 (8 oz) tub of cool whip, for topping
  • Chopped pecans, for topping

Directions:

Step 1

Chop the pecan, then add them to the bottom of a casserole dish or pan, and then add the flour and melted butter as well. Stir together all of the ingredients in the pan until it comes together and forms a dough, then spread it all over the pan, and press it down the bottom nicely. Preheat your oven to 350°F at this point, then place the casserole dish in the oven, and allow it to bake for about 20 to 35 minutes or until nice and brown. While waiting for the crust to bake, prepare the filling in the bowl of a stand mixer or use an electric hand mixer instead.

Step 2

Simply beat the cream cheese until smooth and creamy, then gradually add the sugar while beating continuously, and use a spatula to scrape the sides. Continue beating them together, then add the cool whip, and beat until smooth and incorporated. Once the crust is done baking, allow it to cool down completely, then spread the prepared filling all over the top followed by the blueberry pie filling and more cool whip making sure to spread them evenly each time. Chop more pecans and sprinkle them all over the top, then cover the pan with plastic, and place it in the refrigerator to cool for a few minutes or overnight until ready to serve. Enjoy!
