Ingredients:

For the streusel topping:

  • 3/4 cup light brown sugar
  • 1 cup all-purpose flour
  • 1 tsp cinnamon
  • 1/4 tsp kosher salt
  • 6 tbsp unsalted butter (softened and cubed)

For the coffee cake:

  • 2 & 1/2 cups of all-purpose flour
  • 2 & 1/2 tsp of baking powder
  • 1/2 tsp kosher salt
  • 10 tbsp unsalted butter (softened)
  • 1 & 1/4 cup of granulated sugar
  • 1 tbsp lemon zest
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2/3 cup whole milk (room temperature)
  • 2 cups of fresh blueberries (or frozen but do not thaw)

Directions:

Step 1

For the streusel topping, in a medium bowl, add 1 cup of all-purpose flour, 1/4 tsp salt, 3/4 cups of light brown sugar, 1 tsp cinnamon, and 6 tbsp of softened butter. Mix it all to combine. Next, preheat the oven to 350 degrees F and grease your baking dish with butter, then put parchment paper. After this, it’s time to make the batter. In a bowl, add 2 & /2 cups of all-purpose flour, 1/2 tsp of salt, and 2 & 1/2 tsp of baking powder. Whisk it well and then set it aside. Next, in a bigger bowl, add 10 tbsp of softened butter, 1 & 1/4 cups of sugar, and 1 tbsp of lemon zest. After this, mix it up until it’s light and fluffy.

Step 2

After mixing, add the eggs one at a time, continue mixing them, then add 1 tsp vanilla extract. When the consistency becomes cloud-like, it’s time to add the flour mixture in three batches while stirring it continuously, then add 2/3 cup of milk. Now, add 2 cups of fresh blueberries and fold them together. Transfer the batter to your prepared baking dish. Spread them nice and evenly. After this, sprinkle the streusel topping on top. Place it in the oven and bake for an hour.
