While rummaging through my cupboard and looking for something to eat, I found out that I have a lot of leftover ingredients that I need to use before I forgot them again. So, I immediately browsed through the internet to find something that I can make easily, quickly, and with only a few ingredients, especially those that I already have. Luckily enough, I found this video tutorial by RecipeTin Eats and I instantly knew that this recipe is definitely one that I would keep for future cooking, too. I was impressed with the taste and now I never want to have another side dish except for this baked fried rice!

Ingredients:

Baked Fried Rice

  • 1½ cups of long-grain white rice, uncooked
  • 2 cups of chicken or vegetable stock, low sodium
  • 1½ tbsp of light soy sauce
  • 1 tbsp of Chinese cooking wine, dry sherry, mirin, sake
  • 2 cloves of garlic, minced
  • 2 cups of frozen diced vegetables, carrots, peas, and corn mix
  • ¼ tsp of white pepper
  • 1¼ cups of uncooked bacon or ham, chopped

Finishing

  • 1 tbsp of sesame oil
  • ½ cup or 2 to 3 stems of green onion, finely chopped

Directions:

Step 1

On a deep baking sheet, add the rice, chicken or vegetable sodium, light soy sauce, cooking wine, minced garlic, and white pepper, then mix them all together until well combined, and spread them evenly all over the pan. Sprinkle the chopped bacon or ham all over the top evenly, then cover the baking sheet with aluminum foil, and place it inside the preheated oven at 390°F or 200°C.

Step 2

Allow it to bake for about 40 minutes while covered, then remove the foil, and continue to bake for another 15 minutes while uncovered. Once done baking, allow it to rest for about 10 minutes while loosely covered with foil, then fluff the rice before adding the green onion and sesame oil, and continue to fluff while mixing until combined. Serve and enjoy!
