Ingredients:

Crust:

  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 8 tbsp unsalted butter

Filling:

  • 1 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 tbsp all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • chopped pecans or walnuts
  • 7 oz bag of sweetened shredded coconut

Directions:

Step 1

Add 1 cup of all-purpose flour in a bowl followed by 1/2 cup of light brown sugar. Mix well, then stir in 8 tbsp unsalted butter. Combine everything until crumbly texture. Once done, transfer the crumby mixture to a parchment paper-lined baking tray. Spread and press it down, then place it in a preheated 350 degrees F oven, baking it for ten minutes. After baking, remove it from the oven and let it cool completely. In the meantime, make the filling.

Combine them well until no lumps, then fold in some chopped pecans or walnuts and a 7 oz bag of sweetened shredded coconut. Dump in the filling over the cooled crust, spreading it nicely and evenly. Place it in the preheated 350 degrees F oven and bake for 20 to 25 minutes. After baking, let it cool for an hour before slicing it into bite-size pieces.
