Add a generous amount of cooking oil to a medium-sized pan and place over medium heat.
Slice the hard-boiled eggs in half, lengthwise. Carefully separate the cooked yolks from the egg whites and place them in a medium bowl.
Prepare the coating. Beat 3 eggs in a bowl, then on two separate plates add 1 cup of flour and 1 cup of panko bread crumbs.
Coat the cooked egg white with flour, dip in the beaten egg, then coat with panko bread crumbs. Carefully place the eggs into the hot oil and fry them for about 2 to 3 minutes, flipping over halfway through. Once cooked, remove from the pan and drain excess oil on a paper towel.
Add 2 tablespoons of mustard, 2 tablespoons of pickle relish, 4 tablespoons of mayonnaise, 1 teaspoon of hot sauce, salt, and pepper to the egg yolks, and mash them until smooth.
Transfer the yolk mixture to the piping bag or plastic sandwich bag if you don’t have one. Squeeze the mixture into each of the fried egg whites, then dust with paprika if preferred. Serve and enjoy!
