Cut a large white onion in half. Dice the one half and slice the other half. Next, finely mince three garlic cloves and ginger. Set them all aside. Now, cut the beef into slices and transfer them to a large mixing bowl. Add 2 1/2 tsp soy sauce, 2 tsp dark soy sauce, 1 1/2 tsp sugar, 1 1/4 tsp baking soda, 2 1/2 tbsp cornstarch, 2 tbsp water, and 2 tbsp oil. Mix everything, making sure the beef slices are well coated.

In a large pan over medium-high heat, add 2 tbsp cooking oil and saute the sliced onions. Add 1 tsp curry powder, 1/8 tsp sugar, and 1/8 tsp salt. Keep mixing, making sure not to overcook the onions. After sauteing, remove the onions, then add another 2 tbsp of cooking oil to the same pan. Saute the diced onions until golden, then add the minced garlic and ginger. Briefly saute, then add the marinated beef slices. Cook them until slightly browned.
Now, make some space onto the pan and add a little bit of oil. Add 5 tsp curry powder and 1 tsp paprika. Mix to dissolve, then stir it with the beef. Add 4 tsp soy sauce and 4 tsp dark soy sauce. Mix well together, then add 3/4 cup of water. Once it starts simmering, stir in the cooked onion slices. (Turn the heat off at this point). Serve and enjoy!
